Citrus Muffin Lunch Boxes with Horizon® Organic Milk

Fresh Citrus Muffins
Ingredients:
2 Cups Gluten-free flour
2 Eggs Substitute: 2 Tbsp. ground flaxseed + 6 Tbsp. water, mixed in a separate bowl.
1/3 Cup Cane Sugar
½ Cup Freshly Squeezed Navel Orange Juice
½ Cup Horizon® Organic Milk
½ Cup Oil
Zest of 1 Navel Orange
1 Tbsp. Almond Extract
1 Tbsp. Xanthan Gum
1 Tsp. Fresh Meyer Lemon Juice
1 Tsp. Baking Powder
½ Tsp. Baking Soda
Glaze:
1 Cup Powdered Sugar
2 Tbsp. Freshly Squeezed Navel Orange Juice
Garnish:
½ Cup Navel Orange + ½ Cup Sumo Tangerine Slices
Directions:
Preheat oven to 400 degrees. Gather large and small muffin tins. Line muffin tins with muffin liners.
Lightly beat eggs. Or, for an egg-free recipe stir ground flax + water and let stand for 5 minutes.
Pour gluten free flour in a large mixing bowl. Add: sugar, oil, almond extract, xanthan gum, baking powder + baking soda. Stir.
Zest one orange. Stir in orange zest.
Slice navel orange in half and juice ½ cup of freshly squeezed orange juice. Stir in orange juice.
Juice 1 Tsp. Fresh Meyer lemon juice. Stir in lemon juice.
Stir in ½ Cup Horizon® Organic Milk + eggs or egg substitute.
Pour into cupcake liners.
Bake for 12 minutes for mini cupcakes. Bake for 20-22 minutes for large muffins.
Let cool.
Prepare glaze. Stir together 1 Cup powdered sugar + 2 Tbsp. freshly squeezed navel orange juice. Add more powdered sugar or juice until desired thickness is reached. Optional: add natural orange food coloring.
Slice ½ Cup of navel orange + ½ Cup Sumo tangerine Slices
Once cool, drizzle glaze and top with orange + tangerine slices.
Mom Hack:
Use your favorite store-bought gluten free muffin mix from Sprouts Farmer’s Market®. Cut the milk down to ½ cup + add ½ cup of fresh navel orange juice. Add the zest of one orange, 1 Tsp. fresh lemon juice + 1 Tbsp. Almond extract (omit vanilla extract if called for).

Mashed avocado mixed with toasted walnuts + sautéed spiralized butternut squash + sliced mini red and orange bell peppers.
